Linguine with Lemon & Walnuts
Cook 500g pasta according to directions, drain. Place 1/2 cup olive oil, 3 crushed garlic cloves, 1 Tbsp roughly chopped walnuts and 1 Tbsp freshly chopped parsley in a small pan. Cook over low heat, about 1 minute. Remove from heat, add 4 Tbsp lemon juice and stir through. Pour sauce over pasta, toss through 4 Tbsp grated parmesan cheese, extra 3/4 cup freshly chopped parsley, extra 1 Tbsp chopped walnuts & freshly ground black pepper. Serves 4

Add pasta and 1 Tbsp. of salt to 5 litres of boiling water, cook for 10 minutes or to taste.
