Preparation and Storage
Recipes
Vermicelli with PrawnsCook 500g pasta according to directions, drain. Quarter and slice 12 ripe tomatoes, set aside. Heat 2 Tbsp olive oil in a large pan, cook 20 raw prawns (peeled) in batches for 2-3 minutes, or until pink and just cooked through. Set aside and keep warm. Add 2 cloves of crushed garlic and 2 finely chopped red onions to pan, cook, stirring until onion is soft. Add sliced tomatoes, 1/2 cup capers (drained), 4 Tbsp freshly chopped parsley and an extra 4 Tbsp olive oil. Cook, stirring until warmed through. Divide pasta between bowls, top with sauce and prawns. Serves 6-8.
Preparation and Usage
Add pasta and 1 Tbsp. of salt to 5 litres of boiling water, cook for 6 minutes or to taste.
Storage
Store in a cool dry place.
